  • Bison
    • 119,314 bison on 975 farms in Canada (source: 2016 census of agriculture)
    • Bison production in Canada is concentrated in the west, with 80% of the herd in Saskatchewan and Alberta
    • 7,859 bison slaughtered by federally and provincially licensed establishments
    • Exports: 25,721 live bison valued at $80 million and 370 tonnes of bison meat valued at $5 million. Bison meat exports are primarily to the US, but boneless product is also shipped to numerous countries in Europe, most notably Switzerland, Netherland and Italy
    • Imports: 219 tonnes of bison meat valued at $4.5 million
  • Goats
    • 230,034 goats on 5,627 Canadian farms.(source: 2016 census of agriculture). In Canada, the goat industry can be segmented into three distinct sectors: chevon (meat), dairy (milk) and fiber (mohair and cashmere)
    • 86,871 goats slaughtered in Canada. 99% of these goats were processed at provincially inspected establishments
    • Exports (2019): 1,479 head of goat valued at $100,957. Imports: 1,173 tonnes of goat meat valued at $11.3 million
  • Cervids
    • 37,343 farm raised cervids (deer and elk) on 600 farms (source: 2016 census of agriculture)
    • Elk are primarily farmed in Western Canada and red deer in Eastern Canada. Fallow deer, white-tailed deer and other cervid species are farmed throughout Canada
    • 1,295 deer and 2,821 elk slaughtered in federally and provincially inspected establishments in Canada
    • Exports: 2,592 kg of venison. Imports: 188 tonnes of venison
  • Mink
    • 1,589,000 mink pelts valued at over $44 million produced on 98 Canadian farms (2018)
