Overview

This report provides a statistical overview of the vegetable industry including the number of farms, total farm area, production, farm gatenote 1 value, consumption and trade in the sector. It largely focuses on field vegetables.

In 2024, Canada produced more than 2.3 million metric tons of field vegetables, representing an increase of 2.5% over 2023. Tomatoes, which represented the largest proportion of field vegetable production (23.2%), saw production grow by just 0.2% in 2024. Meanwhile, other top field vegetable commodities, such as carrots and dry onions (which represent 14.9% and 12.6% of total field vegetable production, respectively) saw production increases of 1.8% and 8.0%.

Ontario remained the largest producing province, accounting for nearly 57.9% of Canada's total production of field vegetables in 2024, followed by Quebec (over 30.6% of production). Nova Scotia, Alberta and British Columbia each contributed between 2.8% and 3.4% to total production, while other field vegetable-producing provinces each accounted for less than 1%. Ontario's total field vegetable production increased by nearly 1% over 2023. Following adverse weather conditions in 2023, Quebec's total production grew by 4.8% in 2024, as did Atlantic provinces, which saw an overall increase of 13.2%. Alberta's field vegetable production rose by 14.5% in 2024, while in British Columbia and Manitoba, production dropped by 8.3% and 3.3%, respectively. In Saskatchewan, production levels increased by a mere 0.1% following a notable production increase in 2023, which was mainly attributed to strong growth in the production of carrots and cabbages, which accounted for 83% of the province's total field vegetable production in both 2023 and 2024.

Total farm gate value for Canadian field vegetables increased by 5.5% to $1.73 billion in 2024. The combined farm gate values for dry onions ($181.1 million), carrots ($163.8 million), tomatoes ($159.3 million), cabbage ($134.9 million), lettuce ($106.0 million) and peppers ($97.3 million) comprised nearly 50% of the total value of all field vegetables grown in Canada last year.

While dry onions represented Canada's most important field vegetable crop in terms of value in 2024, they represented the third-most important field vegetable crop in terms of production volume (298,564 metric tons). Planted area for dry onions in 2024 (6,485 hectares) increased by 5.8% compared to 2023. Dry onions are mainly produced in Quebec (43%), Ontario (37%), and Alberta (13%). As already noted, total production of dry onions increased by 8.0% in 2024 over 2023, while overall farm gate value for dry onions increased by 12.9%.

Carrots were Canada's second-most important field vegetable crop in 2024 in terms of value and served as the second-most important in terms of total production volume (351,568 metric tons), and as the third-most significant crop in terms of planted area (8,599 hectares), with planted area decreasing by 3.1% in 2024. Carrots are produced across Canada, with the bulk of carrot production taking place in Ontario (45%), Quebec (31%) and Nova Scotia (16%). In 2024, total production of carrots increased by 1.8% over the previous year, and overall farm gate value for carrots grew by 1.6%.

Canada's most important field vegetable crop in terms of total production volume continued to be field tomatoes (548,107 metric tons in 2024). Field tomatoes were also the third-most important crop in terms of value, with production heavily concentrated in Ontario (98%). The majority (93%) of Canada's production of field tomatoes is destined for the processing market. In 2024, total acreage for field tomatoes (6,243 hectares) and farm gate value decreased by 2.7% and 0.4% respectively, while total production increased by 0.2%.

With increased domestic production in 2024, total Canadian field vegetable export values also rose by 4.4% over the previous year to $1.06 billion. Canada ranked as the sixth-highest fresh vegetable exporter with a 4.1% global share. Although export values surged over 2023 for top commodities like peppers (+42.7%), cabbages (+18.1%) and onions and shallots (+9.9%), export values for most other field vegetables, such as cucumbers and gherkins (-14.6%) and carrots (-8.3%), declined. The United States remained Canada's largest purchaser in 2024, importing 96.8% of Canada's total field vegetable exports in terms of value.

Given its geographical location and short growing season, Canada is highly dependent on imports to satisfy domestic demand for vegetables year-round. Canada's field vegetable trade deficit was $3.32 billion in 2024. As the fifth-largest fresh vegetable importer worldwide by value with a 5.9% share, Canada imported more than $4.38 billion in fresh vegetables in 2024, representing an increase of 9.80% over 2023. More than $2.6 billion in field vegetable imports (59.5%) were sourced from the United States. Mexico was the second-largest source of Canadian field vegetable imports, with nearly $1.1 billion (24.0%) in import value. In 2024, the top imported field vegetable crops in terms of value included lettuce (16.3%), onions and shallots (9.1%), cauliflowers and headed broccoli (7.9%), tomatoes (6.7%) and cabbages (6.3%).

Table 3.1 note 1

Food available per person is calculated by dividing the domestic disappearance by the Canadian population as of July 1st of the reference year, at the retail level.

Domestic disappearance represents the total food available for human consumption from the Canadian food supply chain.

Total Supply = Beginning stocks + Production + Imports

Domestic Disappearance = Total supply − Exports − Manufacturing − Waste − Ending stocks
