Executive summary

With a population of approximately 40.1 million and the Gross Domestic Product (GDP) in Canada was worth US$2.14 trillion in 2022, according to official data from the World Bank. Canada is therefore currently ranked 9th of the major economies.

COVID-19 had a strong impact on Canada especially in 2020 and 2021. Compared with the consumer spending Can$56,265.1 million in 2021, consumer spending significantly increased to Can$65,901.8 million in 2022. It grew at a compound annual growth rate (CAGR) of 1.4% from 2017 to 2022.

Compared with pre-pandemic year 2019, consumer spending on the full-service restaurants declined to Can$16,489.6 million in 2020 and Can$21,157.7 million in 2021 respectively, but recovered to Can$25,913.7 million in 2022, higher than 2019 level: Can$25,812.1 million. Compared with pre-pandemic year 2019, consumer spending on the limited-service restaurants declined to Can$27,010.2 million and Can$30,189.4 million respectively in 2020 and 2021, rebounding to Can$33,811.5 million, again higher then pre-pandemic 2019 level: Can$31,775.9 million. The CAGR grew at 2.2% from 2017 to 2022.

Sales of café/bars plummet in 2020 (Can$3,538.4 million), 2021 (Can$3,538.4 million) and 2022 (Can$5,166.7 million) compared with Can$5,864.5 million in 2019. The CAGR growth for cafés/bars was −1.6% between 2017 and 2022.

Sales of self-service cafeteria plummeted in 2020 (Can$316.3 million), 2021 (Can$391.8 million) and 2022 (Can$486.1 million) compared with Can$654.6 million in 2019 due to home seclusion and COVID-19 measures. It grew negatively at a CAGR of −5.4% from 2017 to 2022.

The street stalls/kiosks channel remained highly fragmented being dominated by independents, Can$523.8 million in 2022 compared with Can$615.6 million in 2019, growing negatively at a CAGR of −2.3% from 2017 to 2022.

 

Market overview and consumption trends

Consumer foodservice

COVID-19 had a strong impact on Canada especially in 2020 and 2021. Compared with the consumer spending Can$56,265.1 million in 2021, consumer spending significantly rebounded to Can$65,901.8 million in 2022, higher than the 2019 level at Can$64,722.7 million. It grew at a CAGR of 1.4% from 2017 to 2022.

The chained consumer spending and independent consumer spending increased in 2022 compared with 2021. But compared with the chained and independent consumer spending in 2017, chained and independent consumer spending in 2022 was higher. That is why the CAGR of chained consumer foodservice was 1.7% and independent consumer foodservice was 1.0% between 2017 and 2022.

Consumer spending is forecast to increase at a CAGR of 6.6% between 2022 and 2027. Among which chained consumer foodservice will grow 6.5% and independent consumer foodservice will grow 6.7% between 2022 and 2027.

Full-service restaurants

In February 2022, the government of Canada lifted all pandemic-related restrictions such as physical distancing measures, limitations on the number of persons allowed inside and mask mandates. Since then, Canadians have returned to full-service restaurants. Dine-in sales almost doubled in 2022 compared to the previous year (Euromonitor 2023).

Compared with pre-pandemic year 2019, consumer spending on the full-service restaurants declined to Can$16,489.6 million in 2020 and Can$21,157.7 million in 2021 respectively but recovered to Can$25,913.7 million in 2022, bigger than 2019 level: Can$25,812.1 million. Chained full-service restaurants declined to Can$7,569.6 million in 2021 and Can$10,911.4 million in 2022 respectively from its Can$11,236.8 million in 2019.

Although independent full-service restaurant decreased in 2020 and 2021 but recovered and surpassed 2019 level (Can$14,575.3 million) to Can$15,002.4 million in 2022.

North American full-service restaurants (chained and independent) and sales did not return to the level seen before the pandemic. In 2022, Pizza full-service restaurants rebounded to 2019 level. Both Its chained and independent full-service rebounded to 2019 level respectively.

In August 2022, sales resumed pre-pandemic patterns, despite inflation and supply chain challenges. By the end of the third quarter, value sales and the number of transactions of full-service restaurants were higher than in the third quarter of 2019 (Euromonitor 2023).

It is forecast that the foodservice sales will grow at a CAGR of 6.9% between 2022 and 2027 as the COVID-19 dies down and customer choose to enjoy the full service restaurants more often. All the subcategories grow as it is expected at the strong CAGR varying from 5.0% (Chained Asian Full-Service Restaurants) to 9.6% (chained North American Full-Service Restaurants) from 2022 to 2027.

Limited-service restaurants

Compared with pre-pandemic year 2019, consumer spending on the limited-service restaurants declined to Can$27,010.2 million and Can$30,189.4 million respectively in 2020 and 2021, but rebounded to Can$33,811.5 million, bigger than 2019 level: Can$31,775.9 million. The CAGR grew at 2.2% from 2017 to 2022.

For the chained limited-service restaurants, consumer spending decreased in 2020 and 2021, but rebounded to Can$28,853.1 million in 2022 compared with Can$26,826.6 million in 2019, growing at a CAGR of 2.5% from 2017 to 2022. For the independent limited-service restaurants, consumer spending decreased in 2020 and 2021, but rebounded to Can$4,958.4 million in 2022 compared with Can$4,949.3 million in 2019, growing at a CAGR of 1.0% from 2017 to 2022.

The bakery products limited service restaurant and burger limited service restaurant are the two best performing categories, registering Can$11,992.3 million and Can$12,028.7 million respectively in 2022. Their CAGR growth are 2.5% and 2.7% respectively from 2017 to 2022.

Limited-service restaurant sales recorded strong growth in 2022, both in terms of value and the number of transactions, reaching volume levels close to pre-pandemic levels. However, inflationary pressures are a key contributor to this strong value increase (Euromonitor 2023).

Over the forecast period, limited-service restaurants are projected to increase at a CAGR of 6.2% from 2022 to 2027, reaching Can$45,602.3 million in 2027. All the subcategories grow between a CAGR of 2.8% (Fish Limited-Service Restaurants) and 8.4% (Chained Ice Cream Limited-Service Restaurants) from 2022 to 2027.

Cafés and bars

Sales of café/bars plummet in 2020 (Can$3,538.4 million), 2021 (Can$4,127.6 million) and 2022 (Can$5,166.7 million) compared with Can$5,864.5 million in 2019. The CAGR growth for cafés/bars was −1.6% between 2017 and 2022, in which chained cafes/bars was −0.1% and independent cafes/bars was −2.5%. Sales of some subcategories started to rebound in 2022 although the total cafes/bars sales (chained and independent) still lower than the 2019 level.

Specialist Coffee and Tea Shops are the best performing categories at Can$2,437.5 million in 2022. It grew at a CAGR of 1.5% from 2017 to 2022. Especially Independent specialist coffee and tea shops rebounded to Can$778.5 million, surpassing 2019 level: Can$733.6 million, with its growth at a CAGR of 2.1% from 2017 to 2022.

Although the recovery of cafés/bars is expected to be slower than other consumer foodservice channels, sales of the most categories and subcategories are expected to return to pre-COVID levels in 2027

Self-service café

Self-service cafeterias continued on the road to recovery in 2022 with positive growth following the severe decline in 2020 as consumers feared contagion from the multiple handling of serving devices and the self-serve format was prohibited under health and safety measures implemented by each provincial government to slow the spread of COVID-19 (Euromonitor 2023).

Sales of self-service cafeteria plummet in 2020 (Can$316.3 million), 2021 (Can$391.8 million) and 2022 (Can$486.1 million) compared with Can$654.6 million in 2019 due to home seclusion and COVID-19 measures. It grew negatively at a CAGR of −5.4% from 2017 to 2022.

Street stalls / kiosks

The street stalls/kiosks channel remained highly fragmented being dominated by independents, Can$523.8 million in 2022 compared with Can$615.6 million in 2019, growing negatively at a CAGR of −2.3% from 2017 to 2022. Chained street stalls/kiosks only represented Can$98.6 million in 2022, down from Can$119.8 million in 2019, growing negatively positively at −3.3% from 2017 to 2022. Independent street stalls/kiosks saw declined sales at Can$425.2 million in 2022, down from Can$495.7 million in 2019, growing negatively at a CAGR of −2.0% from 2017 to 2022.

Street stalls/kiosks continued on the road to recovery in 2022, following the steep decline in 2020. Outlet numbers continued to rise in 2022 and value sales recorded double-digit growth. As Canadians resumed work at the office, street stalls/kiosk business rose (Euromonitor 2023).

Online vs offline ordering

The online consumer service became very popular after the pandemic started. It increased from 10.0% in 2019 to 31.1% in 2020, 31.1% in 2021 and 28.5% in 2022 respectively. The CAGR grew 31.7% between 2017 and 2022 while the offline saw a negative growth −5.1%.

The online café/bars increased from 16.9% in 2019 to 30.2% in 2020, 25.7% in 2021 and 25.9% respectively. The CAGR grew 16.8% between 2017 and 2022 while the offline saw a negative growth −3.4%.

The online full-service restaurants increased from 6.2% in 2019 to 24.8% in 2020, 27.8% in 2021 and 23.2% respectively. The CAGR grew 35.9% between 2017 and 2022 while the offline saw a negative growth −4.2%.

The online limited service increased from 12.3% in 2019 to both 35.8% in 2020, 34.9% in 2021, and 33.8% in 2022 respectively. The CAGR grew 32.1% between 2017 and 2022 while the offline saw a negative growth −6.3%.

The online street stalls/kiosks increased from 0.1% in 2019 to 0.4% in 2020, 3.1% in 2021 and 3.2% respectively. The offline saw a negative growth −0.6% from 2017 to 2022.

Eat-in vs delivery and to-go sales

The consumer service home delivery became very popular after the pandemic started. It increased from 27.0% in 2019 to both 44.3% in 2020 and 41.7% in 2021, and 38.1% in 2022 respectively. Its CAGR grew 6.9% between 2017 and 2022 while the eat-in saw a negative growth −13.2%. However takeaway grew at a CAGR of 24.7% from 2017 to 2022, even higher that the home delivery.

The cafés/bars home delivery increased from 33.4% in 2019 to 60.5% in 2020, 40.3%% in 2021 and 34.5% in 2022 respectively. Its CAGR grew 0.7% between 2017 and 2022 while the eat-in saw a negative growth −4.3% and the drive-through grew at a CAGR of 33.9%.

The full-service restaurants home delivery increased from 19.8% in 2019 to 38.6% in 2020, 39.0% in 2021 and 35.8% in 2022 respectively. Its CAGR grew 11.9% between 2017 and 2022 while the eat-in saw a negative growth −12.5%. However takeaway grew a CAGR of 38.4% from 2017 to 2022.

The limited service restaurant home delivery increased from 29.9% in 2019 to 45.0% in 2020, 42.9% in 2021 and 39.2% in 2022 respectively. Its CAGR grew 5.4% between 2017 and 2022 while the eat-in saw a negative growth −17.5%. However takeaway grew at a CAGR of 13.9% from 2017 to 2022.

The self-service cafeterias saw its takeaway increase growth at a CAGR of 7.1% while eat-in saw a negative growth of −7.1%.

Consumer foodservice by location

Consumer foodservice by location decreased to Can$$47,635.1million in 2020, Can$56,265.1 million in 2021 respectively, but rebounded to Can$65,901.8 million in 2022, compared with Can$64,722.7 million in 2019.

Consumer foodservice through standalone decreased to Can$39,584.7 million in 2020, Can$44,393.2 million in 2021 respectively but, rebounded to Can$49,940.9 million in 2022, compared with Can$46,645.6 million in 2019.

Consumer service through retail decreased to Can$1,976.9 million in 2020, Can$3,319.6 million in 2021 and Can$4,547.2 million in 2022 respectively compared with US$4,614.7 million in 2019. Consumer foodservice through travel decreased to Can$2,524.7 million in 2020, Can$3,263.4 million in 2021 and US$4,151.8 million in 2022 respectively compared with US$4,918.9 million in 2019. Consumer foodservice through leisure decreased to Can$1,405.2 million in 2020, Can$2,138.1 million in 2021, but rebounded to Can$2,636.1 million compared with Can$2,588.9 million in 2019. Consumer foodservice through lodging decreased to Can$2,143.6 million in 2020, Can$3,150.8 million in 2021 and Can$4,625.8 million in 2022 compared with Can$5,954.5 million in 2019.
