Overview

This report provides a statistical overview of the vegetable industry including the number of farms, total farm area, production, farm gate value (FGV), consumption and trade in the sector. It largely focuses on field vegetables. Separate reports for potatoes, greenhouse vegetables and mushrooms are prepared annually.

In 2023, Canada produced over 2.2 million metric tons of field vegetables, a decrease of 2.5% in production over the previous year. Tomatoes, which represent the largest proportion of field vegetable production (23.9%), saw production grow by 2.7% in 2023. In contrast, other top field vegetable commodities, such as carrots and dry onions (which represent 14.9% and 12.2% of total Canadian field vegetable production, respectively) saw production decreases of 1.8% and 3.8%.

Ontario remained the largest producing province, accounting for more than 58% of Canada's total production of field vegetables in 2023, followed by Quebec with over 30%. British Columbia, Nova Scotia and Alberta each contributed between 2.6% and 3.2% to total production, while other field vegetable producing provinces each accounted for 1% or less of Canada's total production. With generally favourable weather conditions having been reported for the 2023 growing season, Ontario's total field vegetable production increased by 1% over 2022. Conversely, Quebec field vegetable producers experienced a cold, wet season which resulted in reported production declines for all main vegetables produced in the province, including cabbage, carrots and dry onions. In British Columbia, total field vegetable production rose by 1.7% in 2023, while Atlantic provinces may have been affected by above-average precipitation, which saw decreases in total field vegetable production for the second year in a row.

Total farm gate value for Canadian field vegetables increased by 1.8% to $1.59 billion in 2023. The combined farm gate values for dry onions ($160.4 million), carrots ($155.0 million), tomatoes ($135.2 million), cabbage ($108.1 million), lettuce ($99.9 million) and peppers ($94.0 million) comprised nearly 50% of the total value of all field vegetables grown in Canada last year.

While dry onions represent Canada's most important field vegetable crop in terms of value ($160.4 million in 2023), they represent the third-most important field vegetable crop in terms of production volume (276,565 metric tons in 2023). Planted area for dry onions in 2023 (6,129 hectares) increased by 2.5% compared to 2022 (5,979 hectares). Dry onions are mainly produced in Quebec (44%), Ontario (38%) and Alberta (10%). As already noted, total production of dry onions decreased by 3.8% in 2023 over 2022, although overall farm gate value for dry onions increased by 1.8%.

Carrots are Canada's second-most important field vegetable crop in 2023 in terms of value ($155.0 million),and serve as the second-most important in terms of total production volume (337,810 metric tons), and the third-most significant crop in terms of planted area (8,805 hectares). Planted area decreased by 7.0% in 2023 compared to 2022. Carrots are produced across Canada, with the bulk of carrot production taking place in Ontario (46%), Quebec (32%) and Nova Scotia (14%). In 2023, total production of carrots declined by 1.8% over the previous year, while overall farm gate value for carrots grew by 3.7%.

Canada's most important field vegetable crop in terms of total production volume continues to be field tomatoes (543,051 metric tons in 2023). Field tomatoes are also the third-most important crop in terms of value ($135.2 million in 2023), with production being heavily concentrated in Ontario (98%). The majority (92%) of Canada's production of field tomatoes is destined for the processing market. In 2023, total acreage for field tomatoes (6,243 hectares) increased by 0.4%, with total production and farm gate value having increased by 2.7% and 5.3% respectively.

With reduced domestic production in 2023, total Canadian field vegetable export values fell by 0.4% over the previous year to $1.01 billion. Canada ranked as the sixth top fresh vegetable exporter with a 3.9% global share. Although export values surged over 2022 for top commodities like carrots (+43.1%) and cabbages (+7.4%), export values for most other field vegetables, such as cucumbers and gherkins (-38.7%), onions and shallots (-24.1%) and peppers (-20.3%), declined over highs recorded in the previous year. The United States remained Canada's largest purchaser in 2023, importing 95.9% of Canada's total field vegetable exports in terms of value.

Given its geographical location and short growing season, Canada is highly dependent on imports to satisfy domestic demand for vegetables year-round. Canada's field vegetable trade deficit was $3.01 billion in 2023. As the fifth-largest fresh vegetable importer worldwide by value with a 5.6% share, Canada imported more than $3.9 billion in fresh vegetables in 2023, representing an increase of 2.1% over 2022. Nearly $2.4 billion in field vegetable imports (60.1%) were sourced from the United States. Mexico was the second-largest source of Canadian field vegetable imports, with over $968 million (24.3%) in import value. In 2023, the top imported field vegetable crops in terms of value included lettuce (16.2% of all field vegetable imports), cauliflowers and headed broccoli (8.6%), onions and shallots (7.3%), cabbages (6.9%) and tomatoes (5.6%).
