Statistical overview of the Canadian maple industry, 2025

Overview

Canada and the United States are the only countries who produce maple syrup at commercial scale. In 2025, the Canadian maple syrup industry accounted for more than 75% of the total world maple syrup production, with 90.0% of Canadian production originating from Quebec, 6.1% from New Brunswick, 3.7% from Ontario, and 0.2% from Nova Scotia. The United States is the second-largest producer, accounting for approximately 25% of global production, with 53.1% of American production originating from Vermont, 14.4% from New York, and 9.6% from Maine. Maple products accounted for 6.3% of all Canadian horticulturenote 1 farm cash receiptsnote 2 in 2025.

Contrary to the general trend in agriculture where a decrease in the number of farms was observed in previous censuses following the long-term trend towards fewer and larger operations, the number of maple product farms increased by 19.2% from 2016 (5,340 farms) to 2021 (6,364 farms). This growth was most notable in Quebec, where in recent years, there has been an increasing trend in the number of producers participating in maple syrup production. This growth in the number of producers was driven by the 2017 addition of 5 million maple 'taps' by the Federation of Quebec Maple Syrup Producers (QMSP) who control the quantity of production in that province and maintain a strategic reserve of storable maple syrup to minimize fluctuations in pricing and availability of supply, which is driven by natural variability in annual production.

In 2025, Canadian maple producers harvested more than 113.4 million kilograms (18.9 million gallons) of maple syrup. Despite favourable weather conditions, overall production in 2025 was down by 5.1% compared to the previous year's record-setting production. The gross value of Canadian maple syrup reached $840.5 million in 2025. Although this represents a 4.6% decrease from the previous year, it marks an 85.5% increase since 2021.

Total production of maple syrup in Quebec amounted to 102.1 million kilograms (17.0 million gallons) in 2025, a 5.9% decrease compared to 2024. Similarly, production in New Brunswick was down by 3.8% over the previous year to reach 7.0 million kilograms (1.2 million gallons). Meanwhile, in Ontario, maple producers harvested 4.1 million kilograms (690,000 gallons) in 2025, with higher yields, additional taps and an extended season within the northern region leading to a 13.7% production increase within the province over 2024. Production in Nova Scotia reached 252,378 kilograms (42,000 gallons) in 2025.

Canadian maple syrup exports totaled 82.4 million kilograms (13.7 million gallons) in 2025, which increased by 15.7% over the 71.2 million kilograms (11.8 million gallons) exported in 2024. In terms of value, Canadian exports of maple products amounted to $844.2 million in 2025, up by 17.2% over the previous year. Canadian maple products were exported to 69 different countries around the world in 2025; 64.2% of the exports were to the United States, 7.2% to Germany, 4.9% to the United Kingdom, 4.5% to Australia, 4.0% to France, and 3.1% to Japan, with other export destinations accounting for the remaining 12.0% of total export volumes.
