Red meat and livestock slaughter and carcass weights

This section provides information on slaughter of livestock (cattle, calves, hogs and sheep/lamb) at federally and/or provincially inspected packing plants in Canada and the United States, along with carcass weights and other sectoral reports and links.

Please note:

Federally inspected slaughter data lags one week after week end. Provincially inspected slaughter data lags 1-3 months for all species except hogs. Provincially inspected hog slaughter to date is estimated then revised.

Open data portal

The Government of Canada open data portal provides for searchable open data with a Comma Separated Values (CSV) file open.

Red meat slaughter Weekly / Monthly
Number of head slaughtered of cattle, calves, hogs, sheep and lamb in federally inspected slaughterhouses. Data from 1997 to present, Canada totals, is available on the Government of Canada’s Open Government Registry.

Red meat carcass weight reports

Reports display average warm carcass weights by species for a selected year.
