Please note:
Federally inspected slaughter data lags one week after week end. Provincially inspected slaughter data lags 1-3 months for all species except hogs. Provincially inspected hog slaughter to date is estimated then revised.

- Number of head slaughtered of cattle, calves, hogs, sheep and lamb in federally inspected slaughterhouses. Data from 1997 to present, Canada totals, is available on the Government of Canada’s Open Government Registry.

Reports display average warm carcass weights by species for a selected year.
